Blend the base
Cut the watermelon into cubes (seedless is easiest) and add 4 cups to a blender along with the juice of the lime, the sugar, and 1 cup of the water. Blend on high until totally smooth. It'll turn this gorgeous bright pink.

Strain it
Pour the blended mixture through a fine-mesh strainer or wire colander into a pitcher, pressing gently to get all the juice through. Toss the pulp left behind. This is the step that takes it from thick and foamy to clean and drinkable, so don't skip it.

Add water and chill
Stir the remaining 2 cups of water into the pitcher. Taste it — if your watermelon wasn't super sweet, add another tablespoon of sugar and stir until it dissolves. Chill until cold, or pour straight over ice.

Serve
Pour over plenty of ice and garnish with a sprig of fresh mint and a lime slice if you've got one. Give it a stir before each glass since it can settle.
