Season and arrange
Preheat oven to 350°F. Grease a 13x9-inch baking dish and spread the instant rice in an even layer across the bottom. Sprinkle both sides of the chicken thighs with garlic salt and pepper, then lay them on top of the rice.

In a large bowl, stir together the chicken broth, picante sauce, tomato sauce, diced onion, and diced green pepper. Pour the mixture evenly over the chicken and rice.

Remove the foil and scatter the Monterey Jack and cheddar evenly over the top. Return to the oven, uncovered, for about 5 more minutes until the cheese is fully melted. Let rest a few minutes before serving.
