Mix the filling
Preheat the oven to 375°F. In a large bowl, combine the refried beans (grab the vegetarian kind if you're keeping these meatless), salsa, cooked rice, and 1 cup of the cheddar, shredded. Stir until everything is evenly mixed.

Roll the burritos
Spoon about 1/3 cup of filling slightly off-center onto each tortilla. Fold the sides and ends over the filling and roll up. Set each one seam side down in a greased 13x9-inch baking dish so nothing leaks out.

Sprinkle the remaining 1 cup of shredded cheddar over the top. Cover the dish and bake until heated through and the cheese is melted, 20-25 minutes. Top with whatever you have around — shredded lettuce, chopped tomato, sliced olives, or avocado all work.
