- 1
Heat the oven
Preheat your oven to 375°F. Tear off four 12x18-inch sheets of heavy-duty foil and give each a quick shot of nonstick spray so nothing welds itself to the packet.
- 2
Make the patties
In a bowl, mix the ground beef with the dry onion soup mix until just combined. Divide into four equal patties and set aside. The soup mix is doing double duty here as your seasoning, so you don't need much else on the meat.
- 3
Toss the vegetables
Peel and thinly slice the potatoes, slice the onion, and dice the carrots. Pile them into a large bowl with the olive oil, garlic powder, and a good pinch of salt and pepper. Toss until everything is coated.
- 4
Build the packets
Spoon a quarter of the vegetable mixture into the center of each foil sheet. Lay a beef patty on top, then spoon about 2 tablespoons of the condensed cream of mushroom soup straight from the can over each patty.
- 5
Seal and bake
Fold the foil up and over, crimping the edges tightly so the steam stays trapped inside. Set the packets beef-side up on a baking sheet and bake 35 to 45 minutes, until the potatoes and carrots are fork-tender and the beef is cooked through (160°F). Open carefully — the steam is hot.
