8cupchicken broth
26ozsmoked sausage
1onion
3cuplong grain rice

    Cook the chicken

    In a 6-quart stockpot, add the chicken thighs and 2 cups of the broth. Cook over medium heat until the chicken reaches 170 degrees, turning halfway through. Pull the chicken out and set it aside to cool. Don't crowd the pot; work in batches if you need to.

    Build the pot

    Slice the smoked sausage and finely chop the onion. Add both to the same pot along with the remaining 6 cups of broth. Crank the heat to high and bring it to a rolling boil.

    Add the rice

    Stir in the rice, drop the heat to a simmer, and cook uncovered for 15 to 18 minutes, until the rice is almost tender. It'll still look a little soupy at this point, and that's exactly right. The bog is supposed to be somewhere between a stew and dry rice.

    Shred and finish

    Shred the cooled chicken into bite-sized pieces and stir it back into the pot. Cover and cook until the rice is fully tender. Season with salt and pepper to taste and serve.
