Brown the beef
Set a deep 12-inch skillet over medium-high heat. Add the ground beef and cook, breaking it up as you go, until browned and crumbly, about 5 minutes. Drain off the grease if there's much of it — a half pound of lean beef usually won't leave much behind.

Soften the vegetables
Dice the bell pepper and onion and mince the garlic. Add them to the skillet and cook, stirring now and then, for 3 to 4 minutes until the onion and pepper soften up.

Toast the rice and season
Stir in the uncooked rice, the whole can of diced tomatoes with green chilies (juices and all), the tomato sauce, and the taco seasoning. Stir until everything is coated and combined.

Simmer
Pour in the beef broth and bring it to a boil. Drop the heat to low, cover, and simmer for 25 minutes without lifting the lid.

Add corn and finish
Uncover and stir well. Scatter the frozen corn over the top (no need to thaw), cover again, and cook another 5 minutes until the liquid is absorbed and the rice is tender. Stir, top with chopped cilantro if you have it, and serve.

- 1 cup long grain white rice
- 10 oz canned diced tomatoes with green chilies
- 8 oz tomato sauce

- 2 cup beef broth
- 1/2 cup frozen corn
