    Brown the sausage

    Slice the smoked sausage into half-inch rounds and cut the onion into rings. Heat the bacon drippings in a large deep skillet or pot over medium-high. Brown the sausage and onion together, stirring, until the sausage is browned on both sides and the onion has softened. The bacon drippings are optional but they add a lot of flavor for pennies.

    Add the potatoes and beans

    Cut the potatoes into bite-sized chunks (peel them or not, your call). Add the potatoes to the pot along with the green beans, minced garlic, beef broth, water, and a half teaspoon each of salt and black pepper.

    Simmer until tender

    Bring everything to a boil, then drop the heat to a simmer. Cook uncovered until the potatoes are fork-tender, about 45 minutes to an hour, stirring now and then. If you want the beans cooked way down Southern-style, keep them going longer. Taste and add more pepper before serving.
