Brown the beef
Heat the oven to 350F. In a large oven-proof skillet over medium-high, brown the ground beef with the finely diced onion and minced garlic until the beef is no longer pink, about 5-7 minutes. Drain off the fat and return the meat to the skillet.

Build the chili
Stir in the chili powder, the chili beans (drain just a little liquid off the top of the can, not all of it), and the drained diced tomatoes. Simmer 10 minutes, stirring often, so the base thickens up instead of going watery. Season with salt and pepper to taste.

Sprinkle the grated cheddar over the meat, then scatter the corn chips on top.

Bake
Bake uncovered 15-20 minutes, until bubbly and the cheese is melted. Everything is already cooked, so you are just heating it through. Serve right away while the chips are still crunchy.
