2garlic cloves
14 1/2ozcanned diced tomatoes with basil and oregano
28ozjarred spaghetti sauce
2/3cupcondensed cream of onion soup
2eggs
1 1/4cupcottage cheese
3/4tspItalian seasoning
9no-cook lasagna noodles
1/2cupshredded Colby-Monterey Jack cheese
1/2cupshredded mozzarella cheese

    Brown the Beef

    Cook the ground beef and minced garlic in a large skillet over medium heat, breaking up the meat as you go, until no pink remains — about 5 to 7 minutes. Drain off any excess fat.

    Build the Sauce

    Stir in the diced tomatoes and spaghetti sauce and heat through. Transfer the meat sauce to a large bowl and set aside.

    Mix the Cheese Layer

    In a separate bowl, stir together the cream of onion soup, eggs, cottage cheese, and Italian seasoning until evenly combined.

    Layer and Simmer

    Return 1 cup of the meat sauce to the skillet and spread across the bottom. Layer with 1 cup of the cheese mixture, then 1½ cups of meat sauce, then half the noodles (break them to fit). Repeat with the remaining cheese mixture, another 1½ cups of meat sauce, and the rest of the noodles. Top with any remaining meat sauce. Bring to a boil, then reduce heat, cover, and simmer for 15 to 17 minutes until the noodles are tender.

    Finish with Cheese

    Remove from heat and sprinkle both shredded cheeses evenly over the top. Cover and let stand 2 minutes until the cheese melts.
