Brown the sausage
In a large saucepan over medium heat, cook the turkey sausage until no longer pink, breaking it up as it cooks. Drain, remove from the pan, and set aside.

Saute the aromatics
In the same pan, heat the canola oil and saute the onion until tender, about 4 minutes. Add the garlic and cook 1 minute more.

Build the soup
Add the water, beans, diced tomatoes (with juice), chicken broth, macaroni, and pepper. Bring to a boil. Cook uncovered, stirring occasionally, until the pasta is tender — about 8 to 10 minutes.

Finish and serve
Reduce heat to low. Stir in the reserved sausage and the spinach. Cook just until the spinach wilts, 2 to 3 minutes. Ladle into bowls and top each with a teaspoon of Parmesan.

- 1/2 lb Italian turkey sausage, casings removed, crumbled
- 1 small onion, chopped
- 1 1/2 tsp canola oil

- 2 cup water
- 1 can (15.5 oz) great northern beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (14.5 oz) reduced-sodium chicken broth
- 3/4 cup uncooked elbow macaroni
- 1/4 tsp black pepper
- 1 cup fresh spinach leaves, roughly chopped
- 5 tsp shredded Parmesan cheese, for serving
