Cook the aromatics
Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook, stirring, until soft and translucent. Add the minced garlic and cook one more minute.

Add the gnocchi straight from the package - no need to boil it first. Cook and stir for 5 to 6 minutes, until the gnocchi is golden brown at the edges.

Stir in the rinsed and drained cannellini beans, the undrained tomatoes, the spinach, and the pepper. Cook, stirring, until everything is heated through and the spinach has wilted down.

Sprinkle the mozzarella and Parmesan over the top. Cover the pan and pull it off the heat. Let it stand 3 to 4 minutes, until the cheese is melted, then serve.

- 15 oz cannellini beans
- 14 1/2 oz canned tomatoes
- 6 oz spinach
- 1/4 tsp black pepper
- 1/2 cup mozzarella cheese
- 3 tbsp parmesan cheese
