    Soak the beans

    Pick through the dried beans and toss out any stones or debris, then rinse. Cover with plenty of water and soak overnight, 8 to 12 hours. Short on time? Pour boiling water over them and let them sit about an hour. Drain before cooking.

    Load the pot

    Add the soaked beans, chicken stock, water, halved onion, ham hocks, and bay leaves to a large stock pot. Give it a good stir so the beans are fully submerged.

    Simmer low and slow

    Bring to a boil, then drop the heat to a steady simmer, cover, and cook about 1 hour 30 minutes, stirring now and then, until the beans are tender and the broth turns creamy.

    Season and finish

    Stir in the black pepper, garlic powder, and salt to taste. Pull the ham hocks, pick the meat off the bone, and stir it back into the pot. Fish out the bay leaves and serve hot.
