Brown the sausage
In a Dutch oven or large pot over medium heat, cook and crumble the sausage until no longer pink, about 5-7 minutes. Drain off any excess fat.

Add lentils and broth
Stir in the lentils, cannellini beans, chicken broth, and water. Bring to a boil, then reduce the heat and simmer covered until the lentils are tender, about 30 minutes. Stir in the diced tomatoes and heat through.

Finish with spinach
Remove from heat and stir in the spinach until wilted, about 1 minute. Ladle into bowls and top with crumbled goat cheese if using.

Notes & Tips
Comes out to roughly $2-$2.50 per serving depending on what sausage you grab — one of the better deals in the soup aisle. Brown lentils are cheap, filling, and pick up the sausage flavor well. Mild Italian sausage works if the spicy version is too much. The soup thickens up a lot the next day as the lentils keep absorbing liquid — just add a splash of broth to loosen it when reheating. Goat cheese is optional but adds a nice tangy contrast to the spicy sausage.
