Brown the beef
Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, 6 to 8 minutes. Tip off any excess fat (pour it into an empty can, not down the drain).

Build the base
Chop the onion and mince the garlic. Add them to the beef and cook, stirring, until the onion softens and turns translucent, about 5 minutes.

Add the tomatoes
Stir in the crushed tomatoes, tomato sauce, and tomato paste. Add the Italian seasoning, oregano, brown sugar, and a good pinch each of salt and pepper. Stir until the paste dissolves into the sauce.

Simmer
Bring the sauce to a gentle simmer, then reduce the heat to low. Simmer uncovered for 25 to 30 minutes, stirring now and then, until thickened and deeply flavored. Taste and adjust the salt near the end.

Cook the spaghetti
While the sauce simmers, bring a large pot of salted water to a boil. Cook the spaghetti until al dente, per the package directions. Scoop out about half a cup of the pasta water, then drain.

Serve
Toss the drained spaghetti with a few big spoonfuls of the sauce, loosening with a splash of the reserved pasta water if it seems tight. Plate and ladle more sauce over the top. Finish with the grated Parmesan.
