Prep the fish
Preheat oven to 400°F. Pat the tilapia fillets dry and lay them on a clean surface. Season both sides with salt and pepper, then dust each side with flour (about 1 tablespoon per side).

Make the egg wash
In a shallow dish, whisk together the egg, 2 teaspoons dijon mustard, 1 tablespoon honey, and 1 tablespoon water until smooth.

Set up the almond crust
Roughly chop the sliced almonds until they're in small pieces (a food processor works great here — a few quick pulses). Mix in the grated parmesan and spread the mixture in a shallow dish.

Coat and bake
Dip each fillet in the egg wash, letting the excess drip off, then press it into the almond-parmesan mixture to coat all sides. Place on a baking sheet sprayed with nonstick spray. Bake for 12–15 minutes, until the crust is golden and the fish flakes easily with a fork.

Make the honey dijon sauce
While the fish bakes, combine the 1/3 cup dijon mustard, Worcestershire sauce, dried thyme, white wine vinegar, and remaining 2 tablespoons honey in a small saucepan. Stir together over medium heat until warm and smooth, 2–3 minutes.

Plate the tilapia and spoon the warm honey dijon sauce over the top. Serve immediately.
