Boil the liquids
In a large saucepan, bring the water and orange juice to a boil.

Add everything
Stir in the rinsed and drained chickpeas, seeded and chopped tomatoes, julienned red pepper, rinsed quinoa, finely chopped red onion, raisins, and curry powder. Return to a boil.

Simmer
Reduce the heat, cover, and simmer for 15 to 20 minutes, until the liquid is absorbed and the quinoa is tender.

Remove from the heat and fluff with a fork. Sprinkle with minced cilantro and serve.

Notes & Tips
The orange juice cooks right into the quinoa, so you get a subtle sweetness without adding any sugar. Raisins might sound odd here, but they play well against the curry and the red onion. Good warm, but honestly better cold the next day once everything's had time to sit.
