Prep the zucchini
Preheat oven to 350°F. Cut each zucchini lengthwise in half. Scoop out the pulp, leaving a 1/4-inch shell, and chop the pulp. Set aside.

Cook the filling
In a large skillet, cook the ground turkey, chopped onion, chopped celery rib, minced garlic, Italian seasoning, salt, cayenne, and paprika over medium heat for 6–8 minutes, breaking up the turkey as it cooks, until no longer pink. Stir in the coarsely crushed croutons, 1/2 cup of the mozzarella, and the reserved zucchini pulp.

Fill and bake
Spoon the filling evenly into the zucchini shells. Transfer to two ungreased 13x9-inch baking dishes and add 1/4 inch of water to each. Cover and bake 30–35 minutes until the zucchini is tender.

Finish with cheese
Uncover, sprinkle with the remaining 1/2 cup mozzarella, and bake another 5 minutes until the cheese is melted.
