    Heat the oven

    Heat the oven to 425°F with a rack in the center.

    Season the vegetables

    Peel the eggplant and cut it into 1-inch chunks. Thinly slice the red onion and slice the garlic cloves. Pile the eggplant, cherry tomatoes, onion, and garlic into a roasting pan large enough to hold everything in one layer. Add the olive oil, cumin, coriander, cayenne, and salt, then toss to coat evenly.

    Roast

    Roast for 20 to 25 minutes, stirring once halfway through. The eggplant should be golden and the tomatoes juicy and wrinkled.

    Cook the farro

    While the vegetables roast, cook the farro in boiling salted water until the grains are puffed and tender, about 20 minutes. Drain well.

    Combine

    Add the drained farro to the roasting pan with the vegetables and let everything cool for about 10 minutes.

    Finish

    Chop the parsley and add it along with the red wine vinegar and crumbled feta. Toss together and serve warm or at room temperature.
