Prep the aromatics
Peel and thinly slice the red onion into long strips. Grate the ginger on a Microplane so you have about a teaspoon for the cod and a half teaspoon for the spinach.

Saute the spinach
Heat 2 tablespoons oil in a pan over medium heat. Add the onion and cook 5 minutes, then add half the ginger and cook another 5 minutes. Stir in the frozen spinach and cook until heated through, about 5 minutes. Add a splash of the soy sauce and the sesame seeds, toss, then move it all to a bowl and cover to keep warm.

Mix the miso glaze
Stir the white miso, honey, remaining soy sauce, and remaining ginger together until smooth. Mix in the chili flakes.

Sear the cod
Pat the cod dry and cut into serving-size pieces. Brush one side with the miso glaze. Wipe out the pan, add 1 tablespoon oil over medium heat, and lay the cod glaze-side down. Cook 4 to 5 minutes so the glaze caramelizes. Brush the top with more glaze, flip, and cook another 3 to 4 minutes until the fish flakes easily with a fork.

Serve
Plate the cod warm over the sesame spinach and onions. Scatter on a few extra chili flakes if you want more heat.
