Start the sauce
Chop the onion and tomato, mince the garlic, and chop the mushrooms. In a small saucepan, saute the onion and garlic in the olive oil for about 1 minute, just until fragrant. Stir in the mushrooms and tomato and cook 3 minutes more.

Simmer it down
Stir in the white wine, salt, basil, oregano, and a good dash of black pepper. Bring to a boil, then reduce the heat and simmer uncovered for 7-11 minutes, until the sauce thickens up. No need to rush it.

Bake the fish
Place the snapper fillets (two 8-ounce fillets) in a greased 13x9-inch baking dish and spoon the sauce over the top. Sprinkle with the Parmesan. Bake uncovered at 400 degrees for 12-18 minutes, until the fish flakes easily with a fork.

Finish and serve
Scatter the minced fresh parsley over the top and serve straight from the dish. A green salad and some crusty bread alongside and you are done.
