Heat the oven and coat the fish
Preheat the oven to 400°F. In a shallow bowl, whisk the lemon juice with the melted butter. In a second shallow bowl, stir together the flour, salt, paprika and lemon-pepper seasoning. Dip each 6-ounce cod fillet in the lemon-butter, then dredge it in the seasoned flour, shaking off the excess.

Lay the fillets in a 13x9-inch baking dish coated with cooking spray and drizzle any remaining lemon-butter over the top. Bake 12 to 15 minutes, until the fish just begins to flake easily with a fork.

Toss the minced parsley with the grated lemon zest and scatter it over the hot fillets right before serving.
