Make the marinade
In a large zip-lock bag or shallow dish, combine the lemon juice, olive oil, 2 minced garlic cloves, rosemary, lemon zest, salt, and pepper.

Marinate the swordfish
Add the swordfish steaks to the marinade, seal and turn to coat. Refrigerate for 1 hour.

Grill
Drain and discard the marinade. Lightly oil the grill grate. Grill swordfish covered over medium-high heat, 4–6 minutes per side, until the fish just turns opaque in the center. Don't overcook — swordfish dries out fast.

Notes & Tips
Swordfish is one of those fish that was made for the grill — thick, meaty steaks that hold together over the grates and pick up a little smoke without falling apart. The rosemary-lemon marinade is light enough to let the fish shine. Don't skip the full hour of marinating — it makes a difference. Sub in tuna steaks or halibut for a slightly different texture but the same great result.
