2swordfish steaks

    Make the marinade

    In a large zip-lock bag or shallow dish, combine the lemon juice, olive oil, 2 minced garlic cloves, rosemary, lemon zest, salt, and pepper.

    Marinate the swordfish

    Add the swordfish steaks to the marinade, seal and turn to coat. Refrigerate for 1 hour.

    Grill

    Drain and discard the marinade. Lightly oil the grill grate. Grill swordfish covered over medium-high heat, 4–6 minutes per side, until the fish just turns opaque in the center. Don't overcook — swordfish dries out fast.
