Start the base
Warm the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook, stirring, until soft and just turning golden, 5 to 7 minutes. Stir in the minced garlic and crushed red pepper flakes and cook one minute more, just until fragrant — don't let the garlic scorch or the sauce turns bitter.

Deglaze with wine
Pour in the white wine and bring it to a boil, scraping up any browned bits from the bottom of the pan. Let it bubble away until the liquid reduces by about half and looks a little syrupy.

Simmer the sauce
Add the undrained diced tomatoes, tomato sauce, minced fresh basil, oregano, salt and pepper. Simmer, stirring now and then, until the sauce thickens slightly, about 10 minutes.

Add shrimp and spinach
Stir in the peeled, deveined shrimp and the finely chopped spinach. Cook until the shrimp turn pink and the spinach wilts, 3 to 5 minutes. Shower with grated Parmesan if you like, and serve over pasta or with crusty bread to catch the sauce.

- 14 1/2 oz diced tomatoes
- 8 oz tomato sauce
- 3 tbsp basil
- 1 tsp oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lb shrimp
- 3 cup spinach
- Parmesan cheese
