Caramelize the onions
Thinly slice the onion. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the onions with a pinch of salt and cook, stirring occasionally, until soft and golden — about 15 to 20 minutes. Remove from skillet and set aside.

Form and cook the patties
Shape the ground beef into 4 thin oval patties, slightly larger than your bread slices — they'll shrink as they cook. Season both sides with salt and pepper. Cook in the same skillet over medium heat, 3 to 4 minutes per side, until cooked through to 160°F. Remove and set aside.

Toast the bread
Spread the remaining 2 tablespoons of butter across one side of each bread slice. Place buttered side down in the skillet and toast until golden brown, 2 to 3 minutes.

Build and press the melts
Mix the Thousand Island dressing and horseradish together. On each of 4 toasted bread slices (untoasted side up), layer a slice of cheese, a beef patty, a quarter of the caramelized onions, and a spoonful of the dressing mixture. Top with remaining bread slices, toasted side out. Return to the skillet and press gently. Cook 1 to 2 minutes per side until cheese is melted and bread is deep golden. Cut in half and serve hot.
