Make the gravy
In a large cast-iron or heavy skillet, heat the butter over medium heat. Add the onion and cook, stirring, until tender, 4 to 5 minutes. Stir in the flour, parsley, pepper, garlic powder, and thyme until blended. Gradually whisk in the broth. Bring to a boil, stirring constantly, then cook and stir for 1 to 2 minutes until the gravy thickens slightly.

Add the turkey and serve
Add the turkey slices to the gravy one at a time, heating each through. Lay two slices of white bread on each plate and spoon the turkey and gravy over the top. Serve hot.
