Warm the beef and gravy
Slice the roast beef if it isn't already, and drain the mushrooms. In a 2-quart microwave-safe bowl, combine the roast beef, the beef gravy from both cans, and the drained mushrooms. Cover and microwave on high for 2 to 3 minutes, until it's hot all the way through.

Make the mashed potatoes
While the beef heats up, whip up the mashed potatoes according to the package directions. Keep them warm — they're catching gravy too.

Build the plate
Cut the Italian bread into four half-inch slices and lay one on each plate. Spoon the hot beef and gravy right over the top, open-faced, so the bread soaks it up. Set a scoop of mashed potatoes alongside and ladle a little extra gravy over both. Serve it hot.
