Make nut mixture
Preheat oven to 325°F. Mix walnuts, pistachios, sugar, cinnamon, and cardamom.

Layer phyllo
Brush 9x13-inch baking dish with butter. Layer 8 sheets of phyllo, brushing each with butter. Sprinkle with 1/3 of nut mixture. Repeat layers twice more. Top with 8 more sheets of phyllo, brushing each with butter.

Cut and bake
Using a sharp knife, cut baklava into diamond shapes all the way through to bottom. Bake 50-60 minutes until golden brown.

Make syrup
While baklava bakes, combine water, sugar, honey, lemon juice, and cloves in saucepan. Bring to boil, reduce heat, simmer 10 minutes. Remove cloves.

Finish
When baklava comes out of oven, immediately pour cooled syrup evenly over hot baklava. Let soak at room temperature for at least 4 hours or overnight before serving.

Notes & Tips
Baklava is a Middle Eastern pastry made with layers of phyllo, nuts, and honey syrup. The key is to pour COOL syrup over HOT baklava (or vice versa) - temperature contrast helps syrup absorb.
