Brown beef and bacon
Preheat oven to 325°F. Cook bacon in Dutch oven until crispy. Remove. Pat beef dry, season with salt and pepper. Brown in batches in bacon fat, 4 minutes per side. Remove beef.

Add carrots, sliced onions, and garlic to pot. Cook until browned, 8 minutes. Stir in tomato paste and cook 2 minutes.

Bring to simmer, cover, and transfer to oven. Braise 2.5-3 hours until beef is very tender.

Prepare garnish
Meanwhile, caramelize pearl onions in butter until golden, 15 minutes. Sauté mushrooms in butter until browned, 8 minutes.

Remove bay leaves and thyme. Stir in pearl onions and mushrooms. Taste and adjust seasoning. Garnish with parsley. Serve with mashed potatoes or crusty bread.

- 12 oz pearl onions, peeled
- 1 lb cremini mushrooms, quartered
- 3 tbsp unsalted butter
- 1/4 cup fresh parsley, chopped
