Make biscuits
Preheat oven to 450°F. Mix flour, baking powder, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk just until combined. Turn onto floured surface, pat to 3/4-inch thickness, cut into rounds. Bake on parchment-lined sheet for 12-15 minutes until golden.

Cook sausage
While biscuits bake, cook sausage in a large skillet over medium-high heat, breaking into crumbles, until browned and cooked through, about 8 minutes.

Make gravy
Reduce heat to medium. Sprinkle flour over sausage and stir for 1-2 minutes. Gradually pour in milk, stirring constantly. Bring to a simmer and cook until thickened, about 5 minutes. Season with pepper and salt.
