Make dough
Combine water, butter, sugar, and salt in saucepan. Bring to boil. Remove from heat and stir in flour until mixture forms a ball. Let cool 5 minutes. Beat in eggs one at a time, then vanilla, until smooth.

Heat oil
Heat oil in large pot to 375°F. Mix cinnamon sugar in shallow dish.

Pipe and fry
Transfer dough to piping bag fitted with large star tip. Pipe 6-inch lengths directly into hot oil, cutting with scissors. Fry 3-4 at a time until golden brown, 2 minutes per side. Drain on paper towels.

Coat with cinnamon sugar
While still warm, roll churros in cinnamon sugar mixture until coated.

Make chocolate sauce
Heat cream until simmering. Pour over chopped chocolate and let sit 2 minutes. Whisk until smooth. Serve churros immediately with warm chocolate sauce for dipping.

Notes & Tips
