Make dough
Mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Beat 2 eggs with ice water. Add to flour mixture and stir until dough forms. Wrap and refrigerate 30 minutes.

Make filling
Cook ground beef in skillet until browned. Add onion and cook until soft, 5 minutes. Add garlic, cumin, and paprika, cook 1 minute. Remove from heat and stir in chopped eggs, olives, and raisins. Let cool.

Roll and fill
Preheat oven to 375°F. Roll dough to 1/8-inch thickness. Cut into 5-inch circles. Place 2 tablespoons filling in center of each circle. Fold dough over to form half-moon, press edges to seal. Crimp with fork.

Brush and bake
Place empanadas on parchment-lined baking sheet. Brush with egg wash. Cut small vent in top of each. Bake 20-25 minutes until golden brown.

Let cool 5 minutes. Serve warm with chimichurri sauce or salsa.

- 3 cup all-purpose flour
- 1 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/3 cup ice water
- 1 lb ground beef
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 2 hard-boiled eggs, chopped
- 1/4 cup green olives, chopped
- 2 tbsp raisins
- 1 egg wash (1 egg beaten)
