Make ranchera sauce
Heat oil in large skillet over medium heat. Sauté onion until soft, 5 minutes. Add garlic and jalapeño, cook 1 minute. Add tomatoes, cumin, chili powder, salt, and pepper. Simmer 15 minutes until thickened.

Prepare tortillas and beans
Char tortillas directly over gas flame or in dry skillet until lightly charred. Warm refried beans in small pot or microwave.

In separate skillet, fry eggs sunny-side up or over-easy.

For each serving: spread warm refried beans on 2 tortillas, top each with a fried egg, and spoon ranchera sauce over eggs.

- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 jalapeño, seeded and minced
- 28 oz crushed tomatoes
- 1 tsp ground cumin
- 1 tsp chili powder

- 8 corn tortillas
- 15 oz refried beans
- 8 large eggs
- 1/2 cup queso fresco, crumbled
- 1/4 cup fresh cilantro, chopped

Notes & Tips
Huevos rancheros means "rancher's eggs" - a hearty Mexican breakfast! The ranchera sauce can be made ahead. Some versions layer everything; others serve it side by side.
