2lbbeef chuck, cut into 1-inch cubes
3tbspolive oil
2yellow onions, diced
4garlic cloves, minced
3tbspHungarian sweet paprika
1tspcaraway seeds
2tbsptomato paste
4cupbeef broth
14ozdiced tomatoes
2red bell peppers, diced
3russet potatoes, cut into 1-inch cubes
2bay leaves
salt and pepper to taste
sour cream for serving

Instructions

    Brown beef

    Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Brown beef in batches, about 3 minutes per side. Remove and set aside.

    Sauté aromatics

    Add remaining oil to pot. Sauté onions until golden, 8 minutes. Add garlic, paprika, and caraway seeds, cook 1 minute until fragrant.

    Build stew

    Stir in tomato paste and cook 2 minutes. Add beef back to pot with broth, tomatoes, bell peppers, and bay leaves. Bring to boil.

    Simmer

    Reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.

    Add potatoes and finish

    Add potatoes, cover, and simmer 30 minutes more until beef and potatoes are tender. Remove bay leaves. Season with salt and pepper. Serve with a dollop of sour cream.
