Brown meats
Heat oil in a large Dutch oven over medium-high heat. Add sausage and chicken, cook until browned, about 8 minutes. Remove and set aside.

In same pot, add onion, celery, and bell pepper. Sauté until softened, 5 minutes. Add garlic and cook 1 minute more.

Stir in rice, tomatoes, broth, Cajun seasoning, and bay leaves. Return meats to pot. Bring to a boil, then reduce heat to low, cover, and simmer 20 minutes.

Stir in shrimp, cover, and cook until shrimp are pink and rice is tender, about 5-7 minutes more.

Notes & Tips
The "holy trinity" of Creole cooking is onion, celery, and bell pepper. Don't skip these! Adjust Cajun seasoning to your heat preference - some blends are spicier than others.
