Prepare noodles
If using dried noodles, soak in hot water until pliable, 30 minutes. Drain. If using fresh, separate gently.

Make sauce
Whisk together dark soy sauce, regular soy sauce, oyster sauce, sugar, and white pepper.

Stir-fry pork
Heat wok over high heat until smoking. Add 2 tablespoons oil. Stir-fry pork until just cooked, 3 minutes. Remove and set aside.

Cook eggs and vegetables
Add remaining oil to wok. Push to side and crack eggs into wok. Scramble until just set. Add garlic and Chinese broccoli. Stir-fry 2 minutes.

Combine and finish
Add noodles, pork, and sauce to wok. Toss everything together over high heat until noodles are coated and slightly charred, 2-3 minutes. Serve immediately.

- 1 lb wide rice noodles (fresh or dried)
- 1 lb pork tenderloin, sliced thin
- 3 tbsp vegetable oil
- 4 garlic cloves, minced
- 4 cup Chinese broccoli (gai lan), cut into 2-inch pieces
- 2 large eggs
- 3 tbsp dark soy sauce
- 2 tbsp regular soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sugar
- 1/2 tsp white pepper

Notes & Tips
Pad See Ew is a popular Thai stir-fried noodle dish. The dark soy sauce gives it the signature dark color and slightly sweet flavor. Wok hei (breath of the wok) comes from cooking over high heat!
