Prepare crust
Preheat oven to 375°F. Roll out pie dough and fit into a 9-inch tart pan or pie dish. Prick bottom with fork. Line with parchment and pie weights. Blind bake 15 minutes. Remove weights and parchment, bake 5 minutes more until lightly golden.

Cook bacon and onion
Cook bacon in skillet until crispy. Remove bacon, drain all but 1 tablespoon fat. Sauté onion in bacon fat until soft, 5 minutes.

Whisk together eggs, cream, milk, salt, pepper, and nutmeg until smooth.

Assemble quiche
Sprinkle bacon, onion, and Gruyère over baked crust. Pour custard mixture over top. Sprinkle with fresh thyme.

Notes & Tips
