Make tomato sauce
Heat 2 tablespoons olive oil in a large skillet. Sauté onion, garlic, and bell pepper until soft, about 10 minutes. Add crushed tomatoes, basil, 1 teaspoon thyme, salt, and pepper. Simmer 10 minutes. Pour into a 2-quart baking dish.

Notes & Tips
This is the beautiful spiral version made famous by the Pixar film. For a more rustic version, you can simply dice all vegetables and stew them together.
