Make teriyaki sauce
Whisk together soy sauce, mirin, brown sugar, rice vinegar, garlic, and ginger in a small saucepan.

Thicken sauce
Bring to a simmer. Mix cornstarch and water, add to sauce. Simmer 2 minutes until thickened.

Marinate salmon
Reserve half the sauce. Brush salmon with remaining sauce, marinate 15 minutes.

Preheat oven to 400°F. Bake salmon 12-15 minutes until flaky.

Brush with reserved sauce during last 5 minutes of cooking.

- 4 salmon fillets
- 1/3 cup soy sauce
- 1/4 cup mirin
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp cornstarch
- 1 tbsp water
- 1 tbsp sesame seeds
- 2 green onions, sliced

Notes & Tips
Don't overcook salmon - it should be slightly translucent in the center. Also delicious grilled.
