Crisp the bacon
Fry the bacon until good and crisp, then move it to a paper towel to drain and crumble it up. Fold most of it into the meat later, and save a small handful to scatter over the top.
- 2
Mix the meatloaf
Heat the oven to 350F. Crush the crackers into fine crumbs. In a big bowl, combine the ground beef, cracker crumbs, garlic powder, onion powder, egg, 1/3 cup of the ketchup, the yellow mustard, 1 tablespoon of the Worcestershire, most of the crumbled bacon, the diced cheddar, and a good pinch of salt and pepper. Mix gently with your hands just until it comes together, no more, or the loaf turns tough.
- 3
Shape and bake
Press the mixture into a greased loaf pan, or shape it into a loaf on a foil-lined baking sheet. Slide it into the oven and bake for 50 minutes.
- 4
Glaze and finish
While it bakes, stir together the remaining 2/3 cup ketchup, the brown sugar, and the last tablespoon of Worcestershire for the glaze. Pull the meatloaf out, brush the glaze all over the top, scatter on the reserved bacon, and return it to the oven for 10 to 15 minutes, until an instant-read thermometer in the center reads 160F.
- 5
Rest, then slice
Let the meatloaf rest for 10 full minutes before slicing. It lets the juices settle and the cheese set up just enough so every slice comes out neat instead of falling apart.
