    Pound the cutlets

    Butterfly each chicken breast and slice down the center to make two thin cutlets from each one. Cover with plastic wrap and pound with a mallet or rolling pin until they're an even one-third inch thick. Even thickness is the whole trick to juicy chicken that fries up nice and quick.

    Set up your dredging stations

    In a small bowl, stir together the 2 teaspoons garlic powder, paprika, cayenne, 2 teaspoons kosher salt, and the 1/2 teaspoon black pepper. In a shallow bowl, whisk 1 tablespoon of that spice blend into the 1 cup flour. In a second shallow bowl, beat the eggs.

    Season, dredge, and rest

    Sprinkle the cutlets all over with the remaining spice mix. Working one at a time, dip each piece in the beaten egg and let the extra drip off, then press both sides firmly into the seasoned flour. Set the breaded cutlets on a rack and let them sit at least 15 minutes — don't skip this, it's what makes the coating stay put in the skillet.

    Fry until golden

    Pour about 1 inch of vegetable oil into a large cast-iron skillet and heat over medium-high until it's glistening (around 350°F). Fry two cutlets at a time until deep golden, 3 to 4 minutes a side. Move to a paper-towel-lined plate and repeat, topping up the oil as needed to keep an inch in the pan.

    Make the cream gravy

    Melt the butter in a small saucepan over medium-low heat. Meanwhile, whisk the 1/3 cup flour into 1/2 cup of the chicken stock until smooth. Turn the heat to high, pour in the flour mixture, and whisk constantly until it starts to simmer. Drop the heat to medium and slowly whisk in the rest of the stock, the milk, 1 teaspoon garlic powder, thyme, 3/4 teaspoon salt, and 1 teaspoon black pepper. Keep whisking until it thickens up, then taste and add salt if it needs it.

    Serve it up

    Ladle that warm cream gravy right over the crispy cutlets and serve straight away, while the coating's still crackly.
