Fill the rolls
Grease a 9x9-inch baking pan. Without pulling the rolls apart, slice the whole slab of Hawaiian rolls in half horizontally and set the bottom half in the pan. Spread the horseradish sauce over the cut side of the bottoms, then layer on the deli ham and the Swiss cheese, cutting the cheese slices in half so they cover evenly. Set the top half of the rolls back on.

Cook the butter topping
Cube the butter and melt it in a small skillet over medium-high heat. Finely chop the onion, add it to the butter, and cook and stir until tender, about 1 to 2 minutes. Stir in the brown sugar, spicy brown mustard, poppy seeds, Worcestershire sauce, and garlic powder until it all comes together.

Pour and chill
Spoon the warm butter topping evenly over the tops of the rolls, letting it soak in. Cover the pan tight with foil and refrigerate several hours or overnight so all that flavor sinks in.

Bake
Pull the pan out of the fridge 30 minutes before baking and heat the oven to 350 degrees. Bake covered for 25 minutes, then uncover and bake another 5 to 10 minutes, until the tops are golden brown. Serve warm and pull them apart.
