Boil the spaghetti
Cook the spaghetti in salted water according to the package directions until just al dente. Drain and set aside.

Brown the beef
In a large skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is no longer pink, 6 to 8 minutes, breaking it into crumbles as it goes. Drain off the grease.

Simmer the sauce
Stir the spaghetti sauce, salt, and pepper into the beef and bring to a boil. Lower the heat and let it simmer uncovered for 20 minutes, stirring now and then, until thick and hearty. Heat the oven to 350 degrees F.

Whip up the cheese layer
In a small bowl, mash and stir the softened cream cheese, ricotta, and sour cream until smooth. Fold in the chopped green onions, saving a few to scatter over the top later.

Layer it up
Grease an 11x7-inch baking dish. Spread the cooked spaghetti evenly across the bottom, smooth the cream cheese mixture over it, then pour the meat sauce over the top, spreading it edge to edge. Scatter the shredded cheddar Monterey Jack over everything.

Cover the dish with foil and bake for 25 minutes. Uncover and bake another 5 to 10 minutes, until the cheese is bubbly and just starting to brown. Sprinkle with the reserved green onions and serve it hot.
