Sweeten the cherries
In a saucepan over medium heat, bring the cherries and 1 cup of the sugar up to a boil. As soon as it bubbles, drop the heat to low and let it simmer, stirring now and then, for about 5 minutes until the juices turn glossy. Pull it off the heat and set it aside.

Mix the biscuit dough
Heat your oven to 375 degrees. In a bowl, whisk together the flour, baking powder, and the remaining 1/2 cup sugar. Cut in the cold butter with a fork or pastry cutter until the mixture looks like coarse crumbs. Pour in the milk and stir just until the dough comes together and moistens — don't overwork it. Spread it evenly into a greased 2-quart baking dish.

Pour and bake
Spoon the warm cherries and all their juice right over the top of the dough — no need to stir, the cobbler sorts itself out as it bakes. Slide it into the oven and bake 40 to 45 minutes, until the fruit is bubbling at the edges and the topping is golden brown. Let it cool a few minutes, then serve warm.
