    Load the Slow Cooker

    Combine the red potatoes, chicken broth, onion, butter, salt, and black pepper in the slow cooker. Give it a quick stir, cover, and cook on High for 4 to 5 hours until the potatoes are extremely soft and the flavors have melded together.

    Stir in the Good Stuff

    Stir in the crumbled bacon, half-and-half, cheddar cheese, and sour cream. Switch to Low and cook for another 15 to 20 minutes until the soup is thick and creamy.

    Mash to Your Liking

    Use a potato masher to mash the soup to your preferred consistency. Leave it nice and chunky or go smooth — totally up to you.
