    Mix the meatballs

    Preheat the oven to 400°F and set a greased rack inside a shallow baking pan. In a large bowl, combine the panko, 1/3 cup of the hot sauce, the finely chopped celery, and the egg white. Add the ground chicken and mix lightly but thoroughly — overworking it makes the meatballs dense.

    Shape

    Scoop and roll the mixture into about 24 one-inch meatballs and space them out on the prepared rack so the heat gets all the way around them.

    Bake

    Bake 20 to 25 minutes, until browned and cooked through to 165°F. Using a rack lets the fat drip off instead of pooling under the meatballs.

    Toss and serve

    Transfer the meatballs to a bowl and toss with the remaining 1/2 cup hot sauce until fully coated. Drizzle with blue cheese or ranch if you want, and serve over rice for a full meal. For meal prep, keep the meatballs plain and toss in sauce right before eating so they don't go soggy.
