Sear the sausage
Slice the andouille sausage into rounds. Heat a large, heavy-bottomed skillet over high heat and add 1 tablespoon olive oil, swirling to coat. Add the sausage in a single layer and sear 1-2 minutes per side, then remove and set aside.

Cook the chicken
Chop the chicken breast into bite-sized pieces. Return the skillet to medium-high heat and add the remaining tablespoon of olive oil. Add the chicken in a single layer, season with salt, pepper, and 1 tablespoon of the Cajun seasoning. Cook undisturbed for 2 minutes, then stir and saute 3-4 minutes more until cooked through. Transfer to a plate.

Mince the onion and garlic. Return the skillet to medium heat, adding a little more oil if needed. Cook the onion 4-5 minutes until soft and translucent. Add the garlic, the remaining tablespoon of Cajun seasoning, the dried rosemary, and a pinch of salt. Stir constantly for 1 minute.

Simmer and finish
Drain the kidney beans and add them with the chicken broth to the skillet. Bring to a simmer, then return the sausage and chicken to the pan. Stir to combine and cook 1-2 minutes until heated through. Season with salt and pepper to taste. Serve over rice if desired.
