12ozpenne pasta
2tbspolive oil
1yellow onion
1lbground turkey
2tspsalt
1/2tspblack pepper
1tspItalian seasoning
5garlic cloves
2tbspall-purpose flour
2cuplow-sodium chicken broth
15oztomato sauce
1cuphalf and half
1cupshredded mozzarella cheese
1cupshredded cheddar cheese
fresh parsley
red chili flakes

    Cook the pasta

    Bring a large pot of salted water to a boil and cook the penne 1-2 minutes less than the package instructions. Before draining, reserve 1 cup of pasta water. Set the drained pasta aside.

    Soften the onion

    Heat the olive oil in a large pan or Dutch oven over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.

    Brown the turkey

    Add the ground turkey and cook over medium-high heat, breaking it into small pieces. Once cooked through, season with salt, pepper, and Italian seasoning. Add the minced garlic and cook for another minute.

    Build the sauce

    Sprinkle the flour over the turkey and stir well to coat. Pour in the chicken broth and tomato sauce. Bring to a simmer and let cook for a few minutes until slightly thickened.

    Add pasta and cream

    Add the cooked penne to the pan and pour in the half-and-half. Stir everything together. If the sauce is too thick, add reserved pasta water a splash at a time. Season with additional salt and pepper to taste.

    Finish with cheese

    Stir in half the mozzarella and half the cheddar. Top with the remaining cheese. Reduce heat to low, cover with a lid, and let sit until the cheese is fully melted. Garnish with fresh parsley and red chili flakes if desired.
