Cook the pasta
Bring a pot of salted water to a boil and cook the pasta to package directions. Before draining, scoop out 1 cup of the pasta water and set it aside. Drain the pasta and set aside.

Prep the chicken
Pat the chicken breasts dry and butterfly them through the middle into 4 thinner pieces. Season both sides with half the salt, half the pepper, and half the garlic powder.

Blend the sauce
Add the milk, cottage cheese, Parmesan, cornstarch, and the remaining salt, pepper, garlic powder, and Italian seasoning to a blender. Blend until completely smooth — this is what makes the cottage cheese disappear into a creamy sauce.

Heat the olive oil in a skillet over medium-high. Cook the chicken 3 to 4 minutes on the first side, flip, and cook another 4 minutes until cooked through. Transfer to a plate and slice into strips.

Pour the blended sauce into a saucepan over medium heat, stirring often until it just begins to simmer. Reduce to low and cook 5 minutes to thicken.

Add the sliced chicken and drained pasta to the sauce and toss to coat. Loosen with the reserved pasta water a splash at a time until creamy, about 1/2 cup.

Top with extra Parmesan and serve hot.
