Marinate the chicken
Cut the chicken thighs into 1-inch pieces. Toss with the seasoning salt, mayonnaise, garlic powder, and 1 tablespoon of the parmesan until evenly coated. Marinate at least 20 minutes, or up to 16 hours in the fridge for the best flavor.

Mash the softened butter with the minced garlic, chopped parsley, remaining 1 tablespoon parmesan, chili crisp, and lemon juice until it comes together into a compound butter. Microwave 5 seconds to loosen slightly.

Thread the chicken pieces onto metal or soaked wooden skewers. Preheat the air fryer to 400F (or heat an outdoor grill to medium-high).

Air fry 4 to 7 skewers at a time, not crowding the basket, for 6 minutes. Flip and cook another 3 minutes. On the grill, cook 12 to 15 minutes, turning regularly.

Once the chicken hits about 150F, brush both sides with the garlic parmesan butter and cook 1 minute more, flipping once, until it reaches 165F. Baste with any remaining butter.
