Blanch the peppers
Cut the green peppers in half lengthwise and discard the seeds. In a Dutch oven, cook the peppers in boiling water for 3-5 minutes, until crisp-tender. Drain and rinse under cold water, then set aside.

Brown the turkey
Chop the onion. In a large skillet, saute the onion in the olive oil until tender. Add the ground turkey, cumin, Italian seasoning, minced garlic, salt and pepper. Cook and stir over medium heat until the meat is no longer pink.

Build the filling
Transfer the turkey mixture to a large bowl. Finely chop the tomatoes and stir them in along with the shredded cheddar and bread crumbs until everything is combined.

Stuff and season
Spoon the filling into the pepper halves. Place them in a 15x10x1-inch baking pan coated with cooking spray and sprinkle the tops with paprika.

Bake uncovered at 325 degrees F for 20-25 minutes, until heated through and the peppers are tender.
